Chicken Tacos with Chipotle

Happy Tuesday everyone! It’s certainly a rainy day out here- it’s been pouring since the early morning and doesn’t seem to want to plan on stopping anytime soon. I recently started a new job where I have to wear actual “adult” clothes (no more cut-off jeans and tank tops!) so I keep eyeing the window and the rain and hoping it’ll stop within the next hour before I have to leave. I feel like there’s nothing worse than being dressed up nice and having to deal with the rain and trying to stay dry!

So I started a job at a company in the city where I’m working as a nutrition consultant which is very exciting. While I’m still working towards getting my graduate degree as a RD, I love that I can now get some field practice as well as experience with helping clients. The last few weeks I’ve just been going through training but today I actually get to see a few clients- I’m excited but also a little nervous!

With this job and the training that goes with it, I’ve started paying a lot more attention to my eating habits. I still haven’t lost any of the excess weight (read: 20 lbs) I put on after my show in April and I really want to focus and hold myself more accountable for my actions and stick with really eating clean, balanced meals and being a role model for others.

It’s been a slow process because I’m not doing this in the style of competition prep and instead am focusing on organizing my meals better but staying away from the food scale. I’m also still going out and socializing with friends like I usually do but am working on eating more balanced meals, or at very least, practicing restraint, moderation and portion control.

I want to lose some of this excess weight, but I also want to keep it off! No more super strict, competition diet where I work my ass off and cut down weight like crazy in 12 weeks, only to immediately put back on. No, this time it’s going to be different.

As much as I hate this phrase that’s incredibly overused, I really am working on a lifestyle change. I want to eat healthier and cleaner on a daily basis and really do better when I’m eating out and dining with others. Through the training I’ve been going through, I’ve realized I’m primarily a “Social Eater”, meaning that usually when I struggle to eat well is when I’m eating out and with friends or family. Even if I don’t always cook healthy foods at home, it’s much easier for me to maintain proper portion control there than when I’m out.

This has been a slow (sometimes agonizingly so) process because I’m so used to an “All or Nothing” approach when it comes to dieting and weight loss but I don’t want to live on only clean meals that don’t allow me to go out and have fun. I love food and I want variety and fun but I also want to make my health a priority in life and so I want to focus more on creating balance.

I’ll definitely be discussing this more in future posts, but with all this being said on balance but enjoying food and varieties, I’d like to share with you these Chicken Tacos with Chipotle. They’re packed full of flavor through the use of lots of fresh herbs such as cilantro (hey there vitamin A and K!) and mint, but also pack a spicy punch from peppers including chipotle and jalapeño. Oh, and P.S., in case you didn’t know, “coriander” is what we call “cilantro” here in the states.
